Cheese omelette with grilled tomato
Crack the eggs into a bowl and beat. Add the cheese and mix. Heat a non stick pan and on a medium heat, add the egg mixture, stirring with a wooden spoon for 30 seconds and leave to cook for a further 2 minutes. Then turn over the omelette and cook for a further 2 minutes. Check the egg has solidified before eating.
Wash and halve the tomato and place on a piece of foil on the grill pan. Cook on a medium heat for 4 minutes turning over half way through.
Turn out omelette onto your serving plate, add some freshly ground black pepper, add the tomato and start eating.
