Vegan Chickpea Casserole
Finely chop the onion. Heat a deep frying pan with the olive oil, add in the onion and sauté until golden brown.
Add in the tomatoes, drained chickpeas, raisins, peanut butter, paprika, a pinch of salt and pepper and the apple juice. Leave to simmer for 15 minutes then serve.
Chickpeas have been linked to improving digestion and aiding weight management.
