Thai Chicken Noodles
Thinly slice the chicken into even strips and place in a bowl with the juice of 1 lime and leave for 10 minutes.
To make the sauce, put all the ingredients into a bowl. Stir and set aside for later.
Heat a large wok with the olive oil. Remove the chicken from the lime juice and place into the wok with a pinch of salt and pepper. Stir fry for 3-5 minutes or until cooked. Remove chicken from the wok to a plate.
Add another tablespoon of olive oil and stir fry the spring onions, mange tout, ginger and garlic for 1 minute or until golden.
Return the chicken to the wok and toss for 1 minute. Add in the noodles and cook for 1 minute, keep stirring well. Pour on the sauce and toss for 1 minute. Turn out onto plate and sprinkle on the chilli before eating.
