Scrambled Eggs on Gluten-Free Toast (no milk)
Crack the eggs into a bowl, add a pinch of salt and mix together with a fork.
Add a teaspoon of light olive oil to a small non stick pan and bring to the heat. Add the beaten eggs to the pan and start stirring with a wooden spoon for 2 minutes or until eggs become dry.
Toast your bread and place onto a plate. Add the cooked eggs and finish with freshly ground black pepper.
