Ham omelette with spinach salad
Crack the eggs into a bowl, add a pinch of salt and pepper and mix together with a fork.
Cut the ham into small squares and add to the beaten eggs.
Add one third of the olive oil to a small non stick pan and bring to the heat. Pour in the omelette mix and keep on a medium heat for 3 minutes. Turn over and cook for a further 2 minutes.
Empty the washed baby leaf spinach into a small bowl, add the extra virgin olive oil and a squeeze of lemon with a pinch of salt and pepper.
Turn out the omelette onto a plate and add the spinach salad and serve.
