Vegetable & Tomato Pasta
Dice the pepper, courgette into 2cm cubes, chop the onion. Heat a frying pan with the olive oil, add in the onion and fry for 1 minute. Then add the diced vegetables, a pinch of salt and pepper and fry together for 2 minutes on a medium heat. Add in the tomatoes, peas and dried herbs, stir and simmer for a further 5 minutes.
Place the pasta in salted boiling water and cook according to the instructions on the packet.
Drain the water then pour the pasta into the pan with the tomatoes and vegetables, stir and serve.
This recipe is low calorie but provides a good increase in energy.
