Vegan chickpea bake
Peel and finely chop the onion . Heat a non stick large saucepan with the olive oil and add in the onion. Sauté for 3 minutes or until the onion is golden brown.
Drain the chickpeas and pour into the saucepan, add in the curry powder, peanut butter, raisins, a pinch of salt and pepper and the apple juice. Stir then empty into an oven proof dish and tightly cover with foil. Place into a preheated oven for 10-12 minutes at 190c/170c fan/gas mark 5 or until sauce has thickened. 4. Serve in a bowl.
