Vegan cajun lentil burgers
Peel and chop the onion then fry in a heated non stick frying pan with the olive oil, a pinch of salt and pepper. Cook for 2 minutes on a medium heat or until golden brown. Then add the grated carrot and garlic and cook for another 2 minutes.
Drain the lentils. Finely chop the tofu. Place both into the frying pan with the onion, sprinkle in the Cajun seasoning and herbs. Cook for 6 minutes stirring regularly until the mixture clumps together. Remove from the pan onto a plate and allow to cool for a few minutes.
After cooling divide into 2 portions and shape into patties. Place back into the heated pan and fry for 4 minutes on each side or until golden brown then serve.
