Step by step method

  • Step 1

    Trim any fat from the steak then cut into strips of 1cm thickness. Season with a pinch of pepper, sprinkle with the flour and mix.

  • Step 2

    Trim the sugar snap peas and set aside.

  • Step 3

    Prepare the noodles as instructed on the packet.

  • Step 4

    Heat your wok with the olive oil, when hot add the steak and stir fry for 1 minute then add the sugar snap peas, the soy sauce and madras paste then continue to cook for a further 2 minutes. Then add the cooked noodles and toss for 1 minute.

  • Step 5

    Turn out onto a plate and serve.

Tips & variations

  • Beware some sauces contain additional oil, which can be 40 calories per teaspoon. Soy sauce only has 11 calories in 1 tablespoon.
