Grilled chicken with salsa
Place the chicken onto a chopping board and cover with cling film. With a food mallet or a rolling pin, pound the thicker part of the breast to even out the thickness of the thicker part of the breast, to allow even cooking. Then place the chicken into a shallow dish, add the juice of 1 1/2 limes, grate a little lime peel over the chicken, add a pinch of salt and pepper. Allow the chicken to marinate for 10 minutes then place under a medium grill and cook for 15-20 minutes turning over half way through. Ensure the meat is thoroughly cooked before eating.
Peel and dice the mango. Dice the tomato. Chop the parsley. Finely chop the onion. Finely dice the chilli.
Drain and wash the beans, then pour into a bowl and add the mango, onion, tomato, chilli. Add the juice of 1 lime, a pinch of salt and pepper. Mix together then add in the chopped parsley, stir a couple of times and set aside until the chicken is cooked.
Place your cooked chicken onto a plate and spoon over the salsa.
