Chicken & Broccoli Linguine
Preheat the oven at 190c/170c fan/gas mark 5.
Place the chicken onto a chopping board and cover with cling film. With a food mallet or a rolling pin, pound the thicker part of the breast to even out the thickness to allow even cooking. Then place the chicken onto a non stick baking tray add a pinch of salt and pepper and sprinkle on the herbs, place into the oven to cook for 15-20 minutes. Ensure chicken is cooked thoroughly before eating.
Wash the broccoli, quarter the florets and place int a pan of boiling salted water. Boil for 5 minutes and drain.
Cook the pasta in a saucepan of boiling salted water according to the instructions on the packet. When ready, drain the water, stir in the pesto and broccoli and turn out onto a plate.
Take the cooked chicken and slice diagonally into strips of 1cm wide then place onto pasta and enjoy.
Broccoli has been linked to many health benefits and is high in vitamins C, Vitamin K as well as being a good source of folic acid.
