Fruity chicken salad
Cut the chicken into 1cm thick slices. Season with a pinch of salt and pepper then place into a preheated frying pan with the olive oil. Stir fry the chicken for 3-4 minutes or until golden brown. Ensure the chicken is thoroughly cooked before eating.
Drain the juice of the mandarins into a bowl, add the vinegar, olive oil, mustard and honey, add a pinch of salt and mix well. Set the dressing aside.
Wash the strawberries, cut off the green leaf and slice in half.
Empty the salad into a bowl, add the mandarin segments and strawberries, pour over the dressing and toss.
Place the salad onto a plate and scatter on the chicken. It's ready to eat.
