Vegetable Burrito
Wash and slice the red pepper lengthways in 1cm slices. Wash and finely dice the tomato. Scoop out the avocado with a teaspoon, mash it and add the Mexican seasoning and mix . Set aside.
Heat the black beans and the rice according to the instructions on each packet.
Heat the tortilla according to the packet instructions then place onto a plate and start to build your burrito by spooning on the beans, rice, avocado and peppers . Give it a generous squeeze of lime and a pinch of salt. Then sprinkle with the diced tomato and roll. It's ready to eat.
